Day 8 of GFDF

Breakfast:

  • Almond Milk & OJ
  • Bowl of Chex with almond milk

 

Lunch:

  • Chicken w/ salad

 

Snack:

  • Rice cake w/ peanut butter

 

Dinner:

  • Boiled Sweet potatoes
  • potatoes
  • carrots
  • chicken

 

Snack:

  • freeze pop
  • handful of chex

Day 7 of GFDF

Breakfast:

  • Hash brown
  • bacon
  • egg

 

Lunch:

  • Double bacon patty only from Burger King

 

Dinner:

  • Fried rice w/ hot dog, onions, spinach, mushrooms and gf soy sauce
  • kimchi

 

Snack:

  • pumpkin seeds
  • freeze pop
  • rice cake w/ peanut butter

 

Ordering at Burger King was much easier.  I know to avoid the salads now.  I was surprised that the burger was only 1.99.  It felt odd eating only meat but I guess that will add some iron. 

Also found out today that there is wheat in a lot of the asian sauces.  Sad smile  No more bulgogi or bimbambop for me.  On the plus side found some gluten free soy sauce and peanut sauce for the spring rolls.  I have a feeling I will be doing a lot of that.  Also the kimchi.  I just love kimchi! 

Earlier in the week, I emailed the Dr.   I was asking if I should be careful of cross contamination.  She said not to worry about it right now.  My cinnamon chex may have milk in it.  I am eating it anyways (no one else will) but did buy another box that seems fine.  This time I bought honey nut Chex. 

So much to learn.

Day 6 of GFDF

 

Breakfast : 

  • OJ
  • Almond Milk
  • chex w/ more almond milk

Lunch:

  • Rice noodles
  • spinach
  • cabbage
  • hot dog

Dinner:

  • boneless ribs from chinese
  • Chicken salad spring rolls

 

Tonight was pretty bad.. My plan was to eat the spring rolls on the road.  However I left them at home.  Tried to get a salad at McD’s.  Turns out they put cheese on their pre-made salads.  Ended up with the boneless ribs.  Not even sure they were safe but it was now 7:30 at night.  However, the place forgot to pack forks so we ended up eating at home around 8:48 pm.  The spring rolls were delicious after being in the fridge.

  • Chicken

  • Chips

 

Dinner:

  • Cubed steaks w/onions
  • asparagus
  • rice

 

Snacks:

  • almonds
  • pumpkin seeds
  • freeze pops
  • fruit spring rolls

 

Noticing the almonds and pumpkin seeds are sitting in my stomach.  Doesn’t feel well.

Day 4 of GFDF

Breakfast:

    • raisins
    • brown sugar
    • vanilla

This tasted great!

 

Lunch:

  • Salad w/ tuna

 

Dinner:

  • Thai Curry w/Pork

 

Snacks:

  • almonds and pumpkin seeds

 

I did make a boo-boo tonight.  I was making mac and cheese for the kids and as always popped a pasta in my mouth to check for done-ness.  I realized instantly and spit it out.  shame, shame…

Day 3 of GFDF

Breakfast : 
  • Almond Milk
  • Orange Juice
  • Potatoes w/egg
Lunch:
  • Chicken w/salad (spinach, romaine, banana peppers, raisins, tomatoes)
  • chips
Dinner:
  • Rice w/ spinach, hotdogs and onions
  • Subway grilled chicken salad w/ dressing from home
Snacks:
  • pumpkin seeds, almonds

We ended up going to Subway after dance because the pancakes the family had was not filling.  It was pretty easy to order from here due to previous research into the allergen list of fast foods.  Next time I would love to order the roast beef and probably she ask them to change their gloves.

Day 2 of GDFree

I think I slept pretty good.  So far there doesn’t seem to be a lot of swelling or redness so I took the MSM again.  This time in a smoothie with way too much chocolate syrup.  I really need to find a better option but the rasp MSM powder is gross!  Also got really loose stools this morning.  hmm.. Maybe the supplements. 

Breakfast:

  • Smoothie
    • Almond Milk
    • bag of mixed fruit
    • 1/2  banana
    • MSM
    • Chocolate Syrup

Snack:

  • Pumpkin seeds

Lunch:

  • 1 beef hot dog
  • tapioca noodles
  • spinach
  • olive oil
  • garlic
  • tomatoes

Snack:

  • Fruit roll
    • tapioca wrap
    • frozen fruit
    • peanut butter
    • honey
    • cabbage

Dinner:

  • chicken legs
  • corn
  • rice

Snack:

  • potato chips
  • chex cereal

 

I weighed in this morning at 328.5.  I am not posting it however.  Only the weekly will go up on the side.  I did ok aside from the emotional breakdown at lunch when I realized the hot dogs had potassium lactate in it.  I went all over the web trying to figure if it was bad for me or not.  I was not a pretty picture during that time. 

We did go out and buy some meat items as well as chex cereal and lays chips (had the least ingredients).

Day 1 of the Gluten and Dairy free diet.

First my supplements were

  • 10 drops of Vit D
  • 2 magnesium
  • 2 B6
  • 2 B complex
  • 1 Vit C
  • 1 Cod liver oil
  • 2 tsp of MSM

The MSM was gross in water.. I have to watch for a reaction since I have had previous experiences that led me to believe I am allergic to sulfur.  I was a bit blotchy but that could have been the cold. 

Breakfast:

  • 2 sausage links
  • 2 eggs over easy

Snack :

  • Pumpkin seeds (1oz)

Lunch:

  • A salad with 1/2 romaine and 1/2 spinach
  • 1/2 can tuna
  • tomatoes
  • raisins (not great with the tuna)
  • 1 tbs Mayo

Snack:

  • 1 tbs peanut butter
  • 2 red potatoes sauteed with onions and olive oil

Dinner:

  • Dinty Moore Beef stew (1.5 servings)

Snack:

  • 2 cups of Watermelon
  • 1 tbs of Peanut Butter

I started off ok, however, mid afternoon my stomach was seriously complaining.  Really hard when everything around me has wheat in it!  We don’t have the money to do a lot of shopping so not much I can do about it.  Night time, while watching a movie, David decided to make a chicken wrap.  Angel then got hungry and started to make something while I just sat there with a grumbling stomach.  I whined about it for quite some time.  Yes, I can get a bit childish.  LOL.

A New Journey

I already posted this on my main site but decided I should also be keeping track here.  So this is a repeat for some of my readers. 
I decided to see a Homeopathic Doctor recently.  I have not seen my regular doctor for about 3 years.  Just got tired of not being listened to.  This doctor was great.  She listened to everything I said and decided that bloodwork was the first thing to do.  I have had bloodwork before but not like this. 
Results came in… 
  • no celiac
  • liver functioning great! 
  • cholesterol good – although good cholesterol should be raised a bit
  • very anemic
  • very low Vit. D – 14 when it should be in the 70’s
  • calcium a bit low
  • thyroid a little on the high side
  • Low folate and B12
  • Positive for Candida
  • slight allergy to soybeans and corn
  • Very allergic to gluten and Dairy! 

    Seriously??  Allergic to gluten and dairy!  This is going to be hard! 

    Plan of Action: 
    no wheat or dairy, period
    10 times the amount of Vit D for 2 months
    b complex vitamins as well as the extra b6 I have
    High Iron Diet
    MSM to help with bone pain and anti-histamine for my seasonal sickness


    After all my mineral are up we will start attacking the candida which can take 4-6 weeks in some cases 3 months.

    Sigh…
